Well the characters are a sort of tricksters, they engage in deceit, magic and violence.It teaches how some aspect of animal and human life came to be. It teaches us not to be so greedy like the coyote, as he took way more than he needed from the cow and later learned his lesson when left with nothing at all.

His audience was mostly puritan as was the case in the 18th century. His audience was probably scared mindless because his sermons usually included scary and vivid description of suffering, hell, sins, the devil, which was all supposed to scare you into being a better christian.
