I think that the answer is that the chicken Govindaswami made was too spicy for some of the guest. Some of the guests, like Mrs. Montrose, were not used to Indian cooking. Govindaswami's chicken was too hot and spicy for them because of the Indian flavors he incorporated in the sauce for the fried chicken.
