Then, most of the digestion and absorption takes place in the small intestine, when the chyme is mixed with the pancreatic juices. But because the access to carbs can be sometimes tough, especially when the products have coverings, like potato skins, cooking will help in softening these and making the access to carbs by saliva, and other juices, easier.
