Fortunately, they could learn all of this as they interacted with local Native American Tribes, this was only possible due to Squanto who was a Native American Indians that help settlers to interact positively with native people and also taught settlers to survive, this included teaching them how to plant, fish and therefore survive with the resources of the land.
