I'm not familiar with the cajun carnaval, but I do know stuff about the winter carnaval here in Quebec.
To start, there is a character which represents the carnaval, Bonhomme Carnaval. He's a snowman wearing a sash (traditional element worn by francophone settlers). Oh, and he also has a red bonnet (also worn by the francophone settlers).
A lot of winter sports and competitions happen during the carnaval (you can say that it's cultural since the territory gets snow). E.g. canoe racing, ballon-balais, hockey (of course!), ski, etc...
Ice sculptures are also made (a few years ago they even made an ice hotel). *There is also an ice palace [for the Carnaval snowman].
Although maple syrup is harvested in spring, some people buy it in cans and do some mapple taffy on snow.
*Not to forget that there is a parade (it's a carnaval) and that [due to the presence of the catholic religion in Quebec] the carnaval is linked to Mardi Gras.

Aujourd'hui, nous fêtons Noël. Je suis heureux d'être avec toute ma famille chez mes parents. <em>(OR/ chez moi).</em>
Mais mon cousin Marc n'est pas là car il est parti étudier aux États-Unis.
Je suis triste de ne pas le voir. Nous passons d'habitude tous les Noëls ensemble.
Marc m'a téléphoné ce matin. Il est heureux de connaître son premier Noël américain.
Ma sœur et moi lui avons dit qu'il nous manquait mais que nous étions heureux pour lui. Nous espérons lui rendre visite l'été prochain.
