Amylase acts in the intestine hydrolyzing glucose polymers (starch, amylopectin, and glycogen). The bonds that hold the monosaccharides together and which are easily digested by pancreatic amylase in the intestine are known as alpha bonds. Some examples of sugars that have alpha bonds are sucrose, maltose, and starch.
