The water table that has accumulated into the ground makes pressure on the places that are more labile to get out on the surface. Over time, this causes bigger and bigger cracks through which the water moves towards the surface. Also, the water is able to corrode the rocks that are in touch with it, so little by little it moves towards the surface. The combination of the pressure and the corrosion enable the water table to work its way out to the surface and create a hole through which the water will get out, commonly known as a spring.
