Vinegar could usually be added to pickles because the added acid of the vinegar inhibits any sort of bacteria from entering the substance, and this would help keep them fresh for a longer period of time too.

The extremely acidic conditions do not allow the growth and development of microbes. Hence, the pickle is preserved for a longer time.
