Les voy a contar sobre un plato Guatemalteco que probé hace poco en un restaurante hispano. Se trata del Pepián, que es un guiso o estofado y puede ser de carne de res, cerdo o pollo y verduras, y se sirve con arroz y tortillas. El guiso es condimentado con el famoso Recado rojo, que es una pasta hecha con una mezcla de especias como achiote, orégano, comino, canela, pimienta, ajo y sal. Esta combinación de especias crea un sabor intenso pero delicioso, aunque en general es suave y no muy picante. Es sin duda uno de los estofados más sabrosos que he probado, y estaba cocinado a la perfección. Yo lo pedí de costilla de res, y la carne estaba muy tierna, los trozos de desprendían del hueso sin ningún esfuerzo, y el sabor de la carne con la salsa era delicioso. También puedes poner la carne en las tortillas y comerlo como un taco, aunque por la salsa es más complicado para comer, pero quedarás chupandote los dedos.  El Pepián es uno de los platos más antiguos de Guatemala, y viene de la fusión de las culturas española y maya, así que hay mucha historia detrás de esta plato, que la puedes sentir en cada bocado.  El restaurante es muy tradicional y con un ambiente muy hogareño, donde se especializan en comida tradicional Guatemalteca, y conservan las técnicas e ingredientes típicos de la región; la decoración es muy colorida, con muchos elementos tradicionales de la cultura. Muy recomendado.

I´m going to tell you about a Guatemalan dish I tried recently at a hispanic restaurant. It's the Pepian, which is a stew that can be made of meat, pork or chicken, with vegetables and is served with rice and tortillas. The stew is seasoned with the famous red Recado, which is a paste made of achiote, oregano, cumin, cinnamon, pepper, garlic and salt. This spices combination gives it an intense but delicious flavor, although in general the taste is mild and not very spicy. It is, without a doubt, one of the tastiest stews I have ever tried, and it was cooked perfectly. I had the rib one, and the meat was so tender that the pieces fell of the bone without any effort, and the taste of the meat with the sauce was delicious. You can also put the meat in the tortillas, and eat it like a taco, although it's a bit messier to eat due to the sauce, but you will end up licking your fingers. Pepian is one of the oldest guatemalan dishes, and it comes from the fusion of Spanish and Mayan cultures, so there's a lot of history behind this dish, and you can feel it in every bite. The restaurant is very traditional and with a homely vibe, is specialized in traditional Guatemalan food, and they maintain the typical techniques and ingredients of the region; the decoration is very colorful, with many traditional elements of the culture. Very recommended.

Buenas a todos! 
Hoy me gustaría hablarles sobre un plato que me fascinó cuando fui a comer a un restaurante español. El plato es de Guatemala y se llama Pollo a la cerveza. Tal y como dice su nombre, se trata de pollo cocinado con cerveza y especies típicas del país. Estaba buenísimo, es de los mejores platos que he probado nunca! Al principio me daba un poco de miedo probarlo porque mis amigos me dijeron que no les había gustado, pero ellos se lo perdían. Les recomiendo a todos ustedes a que lo prueben, no se van a arrepentir. Es como comer nubes en el cielo. Era como comer el pavo del Día de Acción de Gracias, ¡pero muchísimo mejor!
