Well.. it didn't happen over night it takes time for hunter/gathers to build a civilization... But one reason is because technology got more advance and they started making tools (stone,copper,iron) then it kinda just happened populations grew and they needed to sustain life so they needed farms to feed everyone and the nomadic people found out new ways to make towns and civilizations.
