Masks and weights were used so that no one would feel "less than" another.  It kept them all on an even keel.

The noises cause a "distraction" for George taking him away from his "daydream" of thinking. Noises are loud and thus like a train blaring it's horn as you sleep most likely will stir you awake, the same goes for George.

wince means to flinch anticipating pain as in... I winced as I watched my dad move the tweezers toward my finger to get the splinter out.

The two dancers "winced" because the noise was a scary distraction.

personally I think Hazel wants to understand but just can't without having first been in George's situation.  Hazel is able to watch the dancers as witnessed by her tears.  George is trying to watch and/or think about them, but his ear piece is keeping him from being truly attentive.
