\frac{1}{6} = \frac{(z-7)}{12}
⇒6z-42=12
⇒6z=54
⇒z=9

See that on the "left side" of the equation, it's 1/6 while the other side is z-7/12 ?
My quick way for this kind of scenario is to make 1/6 into 2/12. ( 1/6 is simplified version of 2/12 )

So, what - 7 = 2/12? 9!

9-7 =2, so it becomes 2/12. Doesn't 2/12 look the same as the other side,which is also 2/12?

To check: Simplify 2/12 and it becomes 1/6, just like the other/ "left side".
