By comparing the two situations, Schlosser is using the analogy, which is, basically, explaining one situation with another, which is more familiar, with the purpose of clarification.

Since people are, it's safe to guess, not familiar with the situation inside the fast food industry, the author compares it to a movie, which is probably more familiar to the audience, in order to explain his claim.

The information Schlosser wanted to convey through this analogy is, that, just like in the movie, where all actors are children, most of workers in the fast food industry are teenagers and students. In his text, he also states that many of them don't speak English well, that they are immigrants and students who accept working with minimal wages.

Of course, lesser wages are bonus for the hungry-for-profit industry, which explains why it values younger over adult workers.
