Explanation:

We use sarcasm when what we say is exactly the opposite to what it's happening, or to what it is, and is used to mock someone else' views, to hurt someone indirectly or to express an unpleasant situation that is harder to say in another way.

In the excerpt, this kind of remark is what the speaker is using. In reality, the speaker does not mean that they were happy to the way they were living: in draughty caves, hungry so often,  hearing the children whining, neither do they mean that they adapted to that way of living (Who could be happy and adapt to that way of living!?). The speaker indeed suggests exactly all the opposite, but since it was just such an unpleasant and bitter situation for them, they could not find any other way to express it than with sarcasm.

Exhausted, the group finally made it to the light source. The old man on the porch of the cabin, the official “Welcome Committee” quickly raised his gun when he saw the daunting stature of Kristian, standing at 6’6. He then slowly lowered his gun when he saw the injured young gentleman. Though suspicious, the old man invited the group inside and made an ice bath for Tyler’s sprained ankle. He then asked how the injury happened. Kristian happily told the story, still secretly laughing as he replayed the events in his head.
