Energy conversion which leads to the production of electricity is from potential energy more specifically, gravitational potential energy to kinetic energy of the electricity.

Potential energy is the energy due to the position of a body.

Water in a dam, is passed through a channel in dam. The channel is held high up, as the water falls through the channel, it impacts and drives a turbine along its path.

This in turn is connected to a generator that produces electricity.

Gravity increases with the mass of the water and causes the gravitational potential energy of the water to drive the turbines.
