Uh,, no..? A dead persons cells would have already died off/would be dying off and there would be no way for their eyes to change colors. If you have a dead person for some reason and their eyes are changing colors, you should probably call a priest.

Yes, they can turn black. Because of loss of pigments, when you die the body stops making it which stops creating color.
