Coenraad Johannes van Houten born 15 March 1801 was a Dutch chemist and chocolate maker known for the treatment of cocoa mass.

In 1828, Dutch chocolate maker Conrad J. van Houten patented an inexpensive method for pressing the fat from roasted cacao beans.

In 1847, Joseph Fry discovered a way to mix the ingredients of cocoa powder, sugar and cocoa to manufacture a paste that could then be molded into a solid chocolate bar for consumption.
