You would talk more clearly, more proper, you would use bigger more profound words, you would be serious, and you would wait for the speaker to finish, and you would listen intentively when you are writing a letter to a university. When talking to a friend at the mall, you would use more abbreviations, you would be silly, and you would speak randomly.
