Basically just scraps. they might have meat one night, leftover potatoes the next, and they might even get a slice of bread every once in  a while. a great resource to  read up on this is Booker T. Washington documentary's "The Story of My Life" and "Work and Up from Slavery". they have a lot of content on his childhood growing up as a slave on a tobacco plantation in Virginia. hope this is helpful.
