I believe the answer is: The water route played a big role in the French and Indian War because it made it easier to get away.

At that time, the French empire had a way more Developed naval technology compared tot he Indian.

By making the battlefield occurs around naval routes, the French manage to obtain huge competitive advantage sicne they can launch an attack, and directly retreat through water route, making it impossible for the Indian to chase them.
