Dogs are good at learning.

Chicken are obviously smarter than dogs.

We think dogs are smart because they learn tricks that we want them to perform.

It merely showcases the ability to learn and listen (albeit not the capacity that others can). Many other animals showcase these traits as well, like various primates.
