He describes the shoes as something the could make a person's mouth water which is the same as saying that they are delicious. His description of the boot maker as one who can see to the "Soul of the Boot" demonstrates his appreciation for the boots of the boot maker. All of these descriptions show how much the writer admires the shoes of the boot maker. In the second quote, the writer uses words such as "wonderful" and "mysterious". These adjectives further reveal the writer's admiration for the boot maker's skill.
