Pee health codes, food needs to be at certain temperatures for it not to get spoiled or be infected by bacteria. Thermometers are therefore needed to know the temperature the food is at so that the required temperature is maintained.

Non-digital bi-metallic stem thermometers do not serve this purpose very well because they constantly need to be recalibrated to ensure that they give the correct temperature reading. This wastes time and can lead to wrong temperatures being taken thereby endangering the person eating.
