That's because he realizes that he will suffer slowly, until he dies in a very agonizing way. This awakens Fortunato's stress and anxiety, the fear he feels reaches exorbitant levels and for this reason he screams and cries. He does not try to argue with Montressor, because he is terrified and understands that this is a revenge for something he did, in addition to understanding that Montressor is completely crazy and is driving him crazy.
