Because of evolution. If a bird needs to get things deep in the dirt, their beaks would be longer. If they are getting big berries, there beaks will be bigger. If their foods are softer, their beaks will be weaker, etc.

The molecules being separated are pushed by an electrical field through a gel that contains small pores.
