He attempts to hold onto the sand with all of his strength, yet it still slips through the cracks between his fingers. This symbolizes the inevitability of her departing, regardless of how much he pleads for her to stay. It reminds me a lot of a song called Fall Down, Never Get Back Up Again by La Dispute, where a man's lover is torn from his grasp by the sea and he never recovers. The imagery in that song is beautiful.
A photographer might be interested in capturing the human element because taking a picture of an actual human may be more natural then taking a picture of something else. I also think that since humans do things all the time that are interesting it makes sense if you would want to capture it.
