The two greatest impacts on the non-Muslim peoples of the Ottoman empire in eastern Europe were the economy and education. In economy, a system called the Millet System was established. This is a system in which non-Muslim people were treated as subjects of the empire but weren't subjected to the Muslim law or faith. In education, there was a big change in Architecture because of the Muslim architects and the way they put it together.
