The reaction which yields a water molecule at the end is generally a dehydration reaction where two molecules do condense forming a complex molecule and a molecule of water. This may be catalyzed by acid or alkali.

The reaction where water is consumed is called a hydrolysis reaction where hydrolysis of a complex molecule can bring two or more simpler molecules.

The amino acid Aspartic acid has acetate group as the side chain which makes it acidic, so can become negatively charged, as well as polar.

The amino acid Lysine has the side chain - (CH₂)₄NH₂ which is basic, so become positively charged and is also polar.

Carboxylic group is the acidic group of an amino acid whereas amide group is the basic group of amino acid.

The 1st amino acid of a protein has the amide group free, so is called N terminus, and the amino acid at the end has Carboxylic group free, so is called C terminus.
