A look at the sentence, you will discover that "run, jump, swim, throw" are all in the same grammatical structure.

If it was written as: "I can running, jump, swim and throw better than any of my opponent" that will very wrong because they will not be in the same grammatical structure.

Parallelism also refers to the repetition of a similar grammatical form  in two or more parts of a sentence. It serves to give sentences a pattern and rhythm.
