Caste systems were used a lot in the past. I'm not quit sure how to explain it in depth but i'd say it's a ranking of how important you are. The 'untouchables' would have to do jobs that no one else in the caste would do.
Traditionally in the caste system, untouchables perform types of jobs such as sweepers, washers and disposing dead bodies.
