If I'm one of the waitstaff at an Haute cuisine restaurant, the kind of oral and written communication that will be used is non-verbal and verbal communication.

Communication simply means the exchange of information by speaking, writing, or using other mediums. It's simply the sharing of information.

As a waitstaff, both verbal and non-verbal communication will be used. Non-verbal communication can be through eye contact, gestures, etc. Verbal communication implies communication through speaking or writing.
