The reason behind α helices and β sheets common folding patterns in polypeptides is - because they are the consequence of hydrogen bonds developing between the N-H and C=O groups in the polypeptide backbone.

Alpha helices and beta sheets are two folding patterns that are particularly prevalent. Since the side chains of the amino acids are not involved in the formation of these hydrogen bonds, a wide variety of amino acid sequences can result in  α helices and β sheets.

The determining parts of the protein fold closely together and create its three-dimensional shape depends on the individual amino acid residues and their placement in the polypeptide chain. The sequencing is more crucial than the content of the amino acids.
