You could say that he is because he believes in ghosts and so he thinks he is hunting ghosts therefore he is a ghost hunter. But you could also say that ghosts are not real and so there is no such thing as a ghost hunter. But he is technically a real ghost hunter because he thinks he is hunting ghosts, much like a someone working on curing cancer is still a cancer cure specialist even though there is no such thing as a cure for cancer.
