Chicken is the common meat in Bolivia, mainly because less wealthy people (which are a majority in Bolivia) prefer chicken because is cheap, cheaper than beef, than pork, than fish.
Basically, the preference is based on the personal economy of the people. "Sajita de pollo" is one the most popular plates, which is chicken.
