The plasma membrane of the cell is made up of lipid molecules (phospholipids) which are amphiphilic or amphipathic in nature.  

This amphipathic nature of the lipid molecules is due to the presence of both hydrophilic- polar head group and hydrophobic-tails. The tails are made up of two fatty acids which prevent the entry of the water molecules in the cells due to which special proteins called "aquaporins" gets embedded in the plasma membrane to transport the water molecules.

A fatty acid has a hydrophobic tail this means that it does not like to come into contact with water, like when oil wont mix with water and satys separate as a layer or blobs under the surface.
