Basically, Gatsby is belittling Tom.
Gatsby by calling Tom a "bond man" is belittling not only Tom but also all the other people in the bond business. People who work in the bond business are usually conservative, respectable and are interested in security more than quick money. To Gatsby who lives fast and for quick money that is not really something he appreciates.
