If two tectonic plates collide they form a convergent plate boundary, Usually one of the converging plates will move beneath the other, which is known as subduction.

These are my revision notes for plate boundaries. The third explains your question. The two plates converge and as they meet, the force causes fold mountains to form. The most dense plate boundary (oceanic crust) will subduct (go under) the other. This is called a deep sea trench. The crust that goes under will carry some water from the ocean with it and this will make the magma less dense when it melts under found. Therefore, it will rise up and find weaknesses in the fold mountains and form very steamy volcanoes.
