  The higher the glycemic index, the easier the food is digested and absorbed in the gut, increasing the glycemia. Thus, the foods were divided into 3 categories:

Low IG: 55 or less

Average IG: 56 - 69

High IG: 70 or more

 Based on this, the lowest to highest glycemic level food ranks as follows: beans, liver, carrots, white rice and baked potatoes.
