= 41/8 - 30/8
= 11/8 ounces

Second week increase:
6 1/2 - 5 1/8
= 13/2 - 41/8
= 52/8 - 41/8
= 11/8

Third week weight:
52/8 + 11/8
= 63/8
= 7 7/8 ounces
