I think its either because they realize that the person they dismissed is actually beautiful or <span>because they wish they were as intelligent as the speaker. But I think any of those would work nicely.</span>

Answer:

"They" are white people. Not only the white people that hired him and made him eat in the kitchen, but he is refering to the white people in general and how they mistreat black people as they were not Americans and worth of eating at the table with the visitors.
