It is a number used to measure the extent of effect of a particular food to an individual's blood glucose level. Having an index of 100 means that the food is pure glucose. It is the standard for the glycemic index. Foods that has a glycemic index of 55 and less are considered to be low and these foods are digested and metabolized in the body slowly which means that it will have a lower and slower effect on the blood sugar level.
