We have

$\mathbf r_u=\dfrac{\partial\mathbf r(u,v)}{\partial u}=\cos v\,\mathbf i+\sin v\,\mathbf j$
$\mathbf r_v=\dfrac{\partial\mathbf r(u,v)}{\partial v}=-u\sin v\,\mathbf i+u\cos v\,\mathbf j+\mathbf k$
