The correct option is "I am an American-born Korean who loves Mexican food." since it uses capital letters when referring to nationalities.

The capitalization rules indicates that nationalities are proper nouns so they should always be in capital letters.

In this case, the words that should be capitalized in the sentence are: American, Korean and Mexican.

Options A and D are incorrect since not all words mentioned before are capitalized. And option C is also incorrect since the word "born" should not be capitalized.

What category does the following fit in?

B. Universality

When we look at the sentence, “Ulysses is about an average day for an ordinary man,” what we see is that the story can technically have the setting of a regular, commonplace day, a day in which nothing out of the ordinary occurs.  We can also see that the story is about a man that can pretty much be any person.  What this communicates is that it can probably be about anybody and occur on any day, which gives it the air of universality.
