By appealing to the different needs and wants of various ethnic groups, McDonald's is using the Demographic Segmentation.

Demographics is the study of data related to people in a population. Demographic Segmentation is the segmentation of market/people/population according to race, age, religion, gender, income, education, etc. So By keeping in mind, the needs of these different groups, McDonald's uses the approach to better serve their customers.

When using demographic segmentation you are changing the way you advertise and what you carry (often times) to appeal to the consumer market you are in.  In Japan, McDonald's carries some American menu items but also items that are a 'norm' in their country. By doing this, McDonald's is able to services different demographics.
