Schiendick sneers at Josef and the other kids. He also calls them Jewish Rats.

Explanation:

This shows that he truly hates Jews and the sneer points towards him being disgusted that he has to be in their presence. The fact that he hates jews is further proved when in the next paragraph, Josef can hear Schiendick and his friends start singing a Nazi song, singing "<em>When Jewish Blood flows from the knife, things will go much better".</em>
