They passed from hunters that followed herds to farmers because they learned agriculture techniques. Some civilizations such as the Sumerians established next to rivers, in this case, between the Euphrates and Tigris Rivers. Or the Egyptians, that settled in next to the Nile River banks. There, they grew crops that allowed these civilizations to flourish.
