I think I would eat the plant since it was proven to be Non-toxic for humans. But this might affect the environment. Insects can't eat these kind of plant which may bring a shortage of food to them. Insects may also be main food for many animals and if the insects die, the animals might not get much food. This is also same for bees. If the bees don't get their nectar they might die and if they don't pick up pollen and transport it the flowers and plant's might also die, since there is no reproducing going on flowers and plant would not thrive. This plant would be okay for human but this might affect the environment badly.
