2x - 1 > x + 2, so 2x - x > 2 + 1 so

x > 3

Then we have to graph the solution... that's also easy.  It will look like the graph attached, meaning it includes ALL the values X > 3 (that's why the line is dashed on the 3), for ALL the values of Y.

That's a weird graphic, but it does represent the inequality we found.
