The reason as to why cellular organelles have different structures is because the structures of cellular organelles are related to their functions. For example mitochondria posses highly folded inner membranes to enhance the process of electron transpiration and cellular respiration to provide energy for the cell. Others such as rough endoplasmic reticulum posses ribosomes which helps in the synthesis of proteins.

Alright, so mass is a property of a physical body. During physical changes, such as acceleration, force, etc, the mass stays the same since we are not affecting its physical shape, just where it is physics wise. So yeah mass is conserved during a physical change.
