Comida criolla, or Creole cuisine, combines elements from Spanish cuisine with indigenous products and techniques from hispanic regions. Some local primary ingredients that are used are potatoes, plantain, corn, beans, rice, tomatoes. The influence of both cuisines can be seen in the case of Cuban, Puerto RIcan and Dominican creole cuisine.
